Banana Bread

Ingredients

  • 1 stick pasture or unsalted butter
  • 1 cup cane or coconut sugar
  • 2 cage free eggs
  • 3 bananas, mashed and ripe
  • 2 cups gluten free or unbleached flour
  • 1/2 teaspoon aluminum free baking soda
  • 1 teaspoon vanilla extract
  • Optional-1 cup nuts or chocolate chips

I grew up with my mother making this yummy banana bread and I made it for years before we had our son. Now I cook an eggless version but sometimes my husband asks for the real thing. It freezes well and is the perfect snack or breakfast treat.

This is such an easy bread to make and a sure favorite. You can add nuts or chocolate chips if you like.

Directions

1) Cream 1 stick of butter and 1 cup of coconut or cane sugar. Add 2 eggs, 3 ripe bananas, 2 cups of unbleached flour (gluten free works too), 1/2 teaspoon aluminum free baking soda, and 1 teaspoon of vanilla extract. Mix until smooth and pour into a buttered glass or stone ware dish.

2) Bake at 300 degrees for 50 minutes to 1 hour. The bread is done when your toothpick comes out clean in the middle.

1 stick butter
1 cup sugar
2 eggs
3 bananas, mashed
2 cups flour
1/2 teaspoon soda
1 teaspoon vanilla extract
1 cup nuts

Cream butter and sugar together. Add eggs and beat well. Add mashed bananas, flour, soda, vanilla and nuts. Grease and flour 1 large or 2 small loaf pans. Pour dough into pan. Bake for 1 hour or until brown at 300 degrees. Yield: 1 large loaf or 2 small loaves

Note: If you use a Cuisinart to mix the ingredients, add ½ cup flour.
