I am always looking for ways to get my family to drink more fluids and by adding one or two of these colorful ice cubes into my kids’ glasses at dinner, they will drink their water without one complaint. The watermelon adds enough punch to make the water taste like a summer treat. You can also add the ice cubes to a cool glass of lemonade or refreshing citrus cocktail.
If you are planning on staying outdoors and enjoying some sunshine, then eat a couple of these ice cubes first. Watermelon is rich in lycopene which research is showing to be a natural internal sunscreen and it will help you stay hydrated. The lemon juice has vitamin C which is needed to produce collagen for young, healthy looking skin as well as to fight free radicals in case you burn.
1) Pour water into an ice cube tray to determine how much liquid you need to fill the tray. Note- Silicon ice cube trays allow you to remove one cube at a time.
2) Add 2 or 3 cups of seeded or seedless watermelon cubes to a blender. Squeeze 1 lemon and add the juice to the blender. Add 1 or 2 tablespoons of sugar to taste, if using. Pulse until smooth. Look at the measurement etched on the blender to make sure you have enough liquid to fill the tray. Add more watermelon if needed.
3) Place a mint leaf into each ice cube compartment. Pour the watermelon juice into the tray and freeze.
