Bacon Wrapped Scallops

Ingredients

  • 1 pound of dry packed sea scallops
  • 1 pound of uncured bacon
  • 1 fresh, organic red pepper
  • pinch of salt
  • pinch of pepper
  • 1 tablespoon olive oil

This is a very easy appetizer to make for a party. The perfect finger food. Whole Foods prepared the scallops so we cannot take the credit. All we had to do was add the olive oil to the skillet and cook them. I love all their prepared foods so I can spend more time with my kids at dinner time!

If you want to make these at home, all you need to do is wrap one slice of uncured bacon around the outside of the large, dry packed scallop and stick a toothpick through the sides to hold the bacon in place. Add some fresh, organic red pepper slivers on the sides of the toothpick for color. Season with some salt and pepper if you wish.

Drizzle olive oil on a skillet and bake for 5 minutes at 400 degrees and then broil on high for about 5to 10 minutes until the bacon starts to brown.
