This is one of our favorite appetizers from the Ultimate Cookbook. Friends always ask me to make this for holiday parties. It is a crowd pleaser and so simple to make.
All you need is a wheel of Brie, apricot preserves, butter, and Fillo leaves. Fillo leaves can be found in the freezer area of the store.
First, I unroll the leaves and use half of them for a small wheel and 3/4 of the package for a large Brie. Then, I place the dough onto a plate and pour 1/4 of the melted butter in the middle. Then, I spread the preserves.
Next, I place the Brie on the preserves and pour more preserves on the top and spread them on the sides.
Then, I fold the dough over on all sides and encase the Brie. I gently flip the Brie over so the folded edges are on the bottom. I then pour the rest of the butter on the Fillo and make sure it is completely coated.
I do not butter every leaf because I usually do not have the time. It may be better if you do but my way is delicious and easy. Please let me know if there is a huge difference if you take the time to butter each Fillo leaf.
Cook the Brie at 350 degrees for 20 minutes for a small Brie and 25-30 minutes for a large wheel of cheese. The Fillo should be golden brown. Serve warm. The Brie will ooze out when you first cut into the Fillo. It is delicious.
