Dilled Shrimp and Feta Cheese Salad
Preparation time: 20 minutes Cooking time: 5 minutes
1 quart water
1 pound large shrimp, peeled and deveined
3 green onions with tops, thinly sliced
1/2 medium cucumber, peeled, seeded and chopped
2 tablespoons snipped fresh dill
1/4 cup crumbled feta cheese
2 tablespoons lemon juice
2 tablespoons olive oil
1 tablespoon white wine vinegar
1 teaspoon Dijon mustard
1 clove garlic, minced
1/4 teaspoon pepper
Bring one quart water to a boil in a large saucepan. Add the shrimp. Cook for 2 minutes or until the shrimp are firm and turn pink. Drain the shrimp immediately and rinse under cold running water to stop the cooking. Drain the shrimp well and place in a bowl. Add the green onions, cucumber, dill and feta cheese. Combine the lemon juice, olive oil, wine vinegar, mustard, garlic and pepper in a small bowl and whisk until well mixed. Pour the dressing over the shrimp mixture and toss to mix. Yield: 4 servings
