Easter Eggless Cookies

Ingredients

  • Cookies:
  • 1/2 cup cane or coconut palm sugar
  • 1/2 cup organic butter
  • 2 tablespoons organic milk
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 pinch salt
  • 3 tablespoons flour
  • 1/8 cup cane or coconut palm sugar
  • Grass:
  • 1 cup coconut flakes
  • Green food coloring
  • Eggs:
  • Mini chocolate eggs

These are so adorable and easy to make. They are eggless so you can take these to Easter parties at your school. My sister-in-law found this recipe on pinterest and made them this Easter so my son could eat them with all the other kids. You will not know they are eggless.

To make, preheat the oven to 350 degrees. Beat 1/2 cup of melted or room temperature butter with 1/2 cup sugar. I prefer Coconut Palm Sugar since it has a low glycemic index (your blood sugar does not spike as much). Add the 2 teaspoons of vanilla extract and 2 tablespoons of organic milk and mix well.

Sift the pinch of sea salt, 1 cup flour, 1 1/2 teaspoons of baking powder on top of the wet ingredients. Mix together until the dough is sticky. Add up to 3 tablespoons of flour to make it less sticky.

Roll the dough into balls. Flatten or create a nest by pressing your thumb in the middle. Sprinkle with sugar.

Bake at 350 degrees for 8 to 10 minutes.

While the cookies are baking, mix 1 cup of coconut flakes with green dye to create the grass. Only use a couple drops of dye. I love India Tree dyes since they are all natural but it will take more drops of the yellow and blue to create the grassy green color.

Remove the cookies when lightly brown and let cool. Add the grass and three chocolate eggs. Kids can easily help you with this part.

These are the perfect Easter cookie and are so delicious.
