Hangover Rx Smoothie

Ingredients

  • Half a pineapple, about 3 cups of chunks
  • 1 orange, squeezed
  • 1 coconut water (16 fl oz)
  • 1 vanilla bean or a splash of vanilla extract or vanilla bean paste

Happy New Year! In case you had a few too many cocktails last night, here is a drink to help with your hangover.  The coconut water replenishes your electrolytes, the orange juice provides vitamin C, and the bromelain rich pineapple contains enzymes to improve digestion as well as reduce inflammation. The vanilla bean adds a unique flavor as well as antioxidants and B vitamins to improve enzyme synthesis and metabolism of the alcohol.

If you have not been able to eat anything yet, the acid in the orange and pineapple may upset your stomach. Try a glass of coconut water first.  Harmless Harvest is my favorite coconut water in a bottle.  It tastes just like the water out of a coconut. If you buy a young coconut for this drink, scrape out the meat to make a coconut cream.

Directions

1) Remove the skin on half a pineapple and slice into chucks, about 3 cups. Make sure you include the core. Juice one orange. Slice the vanilla bean in half lengthwise and scrape the bean specks from inside of the vanilla bean pod using a spoon. Add all the ingredients into a blender with the coconut water. Puree. Garnish with a pineapple slice and the vanilla bean. Enjoy!

Note: Use a splash of vanilla extract or vanilla bean paste if you do not have a vanilla bean.
