This is my brother’s favorite dip from the Ultimate Cookbook. My father’s caregiver, Dale Milan gave us the recipe. She is an amazing woman and I hope she is doing well.
We buy the Queso cheese at Whole Foods. My brother said white american cheese works too. Add the cheese, milk and green chiles in a pot and melt.

Mexican Cheese Dip
Preparation time: 10 minutes Cooking time: 10 minutes
1/2 pound Mexican white cheese
1/4 cup milk
1 (4-ounce) can chopped green chilies
Melt all ingredients on stove top on low heat until cheese is completely melted. Add milk as needed to reach desired consistency. Serve with assorted chips. Yield: 10 ounces.
Note: The best place to buy this cheese is from a Mexican food store or some farmers markets. The cheese usually comes in a 5 pound block.
