Ingredients

  • 1/2 head of bok choy
  • 4 green onions
  • 1 box of Miso Soup
  • 1/4 cup diced chicken
  • 1 pound of peeled shrimp
  • Optional:
  • Chopped cabbage
  • Minced garlic
  • Minced ginger
  • 1/2 cup chicken
  • 2 tablespoons of olive oil

This is an easy way to use your leftover meat, seafood, and vegetables. We made a savory soup with bok choy, green onions, shrimp, chicken, and Miso soup. You can add steak, or any other meat as well as include other green vegetables. Next time I will add some fresh garlic and maybe a little ginger.

I coated the pan with olive oil and sauted 1/2 a head of bok choy, 4 green onions and added the diced chicken as shown in the picture below. Then I poured in the Miso Soup. When it started to boil, I added the peeled shrimp and cooked them until they were pink. So easy and delicious. We even had it for lunch the next day.

Enjoy!
