Mint Smoothie

Ingredients

  • 3 apples
  • 1/2 pineapple
  • 1 banana
  • 1 orange
  • 1 handful of spinach and arugula
  • sprig of mint
  • 1 tablespoon of local honey
  • strawberries for presentation

We were at Whole Foods and VitaMix was there giving demonstrations and samples. Since my physical therapist mentioned his VitaMix machine several days before, I took it as a sign we needed to buy one. My daughter loved the smoothies they were passing out. I figured it was an easy way to make a healthy breakfast shake or snack.

This morning we mixed some fresh, organic greens and fruit together to make this delicious smoothie. First, we made apple juice by mixing the 3 apples and a cup of water for the base.  We did not strain the puree. Then we added a banana, orange, half a pineapple, fresh mint, a handful of spinach and arugula mix and ice. It was not sweet enough for us so we added some local honey.

We quickly learned not to start the VitaMix on high speed and that the container does not lock on the base. With young children you need to be careful because it will start without the container on the base. Our daughter loved using it after we got the swing of things.

This was our first attempt at making a smoothie and we were pleased with the results. I will be experimenting with other fruits and vegetables as well adding some ginger for it’s anti-inflammatory properties. We will let you know when we come up with a good recipe.
