St. Patrick’s Day Good Luck Smoothie (helps with the hangovers too)

Ingredients

  • 1 cup coconut water
  • 2 large organic kale leaves, stems removed
  • 1 organic green or red apple
  • 1 ripe banana
  • 1/2 organic lime, peeled
  • 1/4 cup local wildflower or clover honey
  • Organic cilantro leaves or paste

For those of you who plan to indulge in several pints of green beer on St. Patrick’s Day, here is a smoothie to give you energy and help with your hangover. Enjoy this on St. Patrick’s Day and the day afterwards. The coconut water will help your body stay hydrated and the cilantro will help remove the toxins and alcohol from your system. The lime will give you the immune boosting vitamin C and the kale has beta carotene to protect your liver.

If you do not have to work Monday morning and getting back on the wagon helps you, then try a Carrot & Cilantro Cooler created from the Whiskey Blue in New York City. It is packed with vitamins.

“In Ireland it was said that the cure for a hangover is to bury the ailing person up to the neck in moist river sand.” While that would be humorous to see, making this smoothie is a much easier cure.

Directions

1) Open a young coconut or a container of coconut water and pour 1 cup into a blender. Cut a lime in half and remove the peel and white part around the lime. Add half of the lime. Clean and remove the stems from the kale and add the leaves. Add one ripe banana, one apple with the core and seeds removed, 1/4 cup of honey, and a very small squirt of cilantro puree or several cilantro leaves. The puree is very strong! Blend well.

2) Serve in a fun glass along side some shamrock shaped pancakes and you may be able to get your kids to try a green smoothie. Enjoy!
