The UnBEETable Smoothie

  • 1 beet
  • 1 Handful of beet greens or kale
  • 1 banana
  • 1 lime
  • 2 tablespoons local honey
  • 5 dates
  • 1/2 sliver of ginger, chopped
  • 1 bag of organic strawberries, frozen
  • 1 sprig of fresh mint

Beets are incredibly good for your heart and body. The bright red color contains betalain and it may have anti-cancer properties. This smoothie gives you the beet, the beet greens, and other powerful antioxidants and vitamins. The apple, pineapple, strawberries, lime have tons of vitamins and fight inflammation in the body. Honey is an anti-bacterial and helps with allergies. The small amount of ginger is hidden in the smoothie but adds a powerful punch for inflammation too. The banana smooths out the texture as well as adds the potassium.

To make, pour a cup of spring of purified water into the blender and add a whole apple cored and sliced. Puree to make apple juice. Add 1 beet or 1/2 cup beet puree, a couple beet greens or kale, one banana, 1 lime peeled, 2 tablespoons local honey, 5 dates, fresh ginger (1/2 inch piece or ginger puree), frozen, organic strawberries (one bag), and fresh mint. Blend until smooth. Taste and see if you want more honey.

Serve with a lime in a wine goblet or your favorite glass. Be careful, this smoothie can stain if you spill.
